Flax, Hemp, and Barley Protein Crepes

Ingredients

  • 1.5 cups of barley flour.

  • 3 tsp of baking powder.

  • 1/2 tsp salt.

  • 3 Tbsp maple sugar.

  • 1/4 cup Gold Top Berry Blend.

  • 1/4-1/2 cup Gold Top Hemp Protein.

  • 1 egg.

  • 2.5 cups of milk.

Variations:

  • Use regular flour. If you use regular white flour, reduce the initial amount of milk to 2 cups.

  • You can add liquid coconut oil to the batter mix instead of putting it in the pan.

Instructions:  

  • Mix all of the dry ingredients (i.e. first 6 ingredients) in a large bowl.

  • With a whisk, beat the egg slightly (less than a minute).

  • Add egg and milk to the dry ingredients. Mix until there are no lumps.

  • Let sit in fridge for 20 minutes (optional).

  • If the batter is too thick, add a bit more milk.

  • If the batter is too liquid, add a bit more flour.

 

By adding hemp protein, barley flour, and the Berry Blend, you are adding essential amino acids, proteins, fibre, beta-glucans, and omega-3 fatty acids. Ultimately, you are making a healthy version of a crepe. Enjoy with maple syrup, butter, fruit or as is.
